Gluten-Free Twix Bars!
Twix was my go-to candy bar as a kid. I just loved the crunch of the tender cookie with gooey caramel. I would eat the first bar "normal", then carefully bite off the caramel on bar #2 and save the cookie for the final treat!
Once I perfected shortbread, making some into a Twix bar was a no-brainer for me! I liked the idea that it would 1) be GF and enjoyed by people that probably hadn't had a twix in a long time and 2) have a more sophisticated flavor using fresh vanilla bean and rich dark chocolate.
I started making them only during the holidays, but now save a few shortbread pieces every batch to make them available more often!
